1 large Egg, fresh, whole, raw
0.50 tsp Pumpkin Pie spice
1 dash Salt
0.25 cup, whole Cranberries
1 serving Sweet Leaf Stevia, 1 Packet
0.25 tsp Xanthan Gum
4 tbsp THM Baking Blend 1/4 c
6 oz 365 Organic Almond Milk Unsweetened
Directions
Preheat a small cast iron pan in the oven at 350 degrees Celsius. Once preheated add the butter and allow to melt. In a blender mix all if the other ingredients except the cranberries. (if not sweet enough feel free to add more stevia.
Pour the batter into the hot cast iron pan with the butter and now add the whole fresh or frozen cranberries to the batter you poured in the pan.
Bake at 350 degrees until it's golden brown.
Top with some whipped cream and enjoy!
