    1/2 Cup White Basmati Rice
    3/4 Cup Swanson Organic Chicken Broth
    1 Tbs. Smart Balance Light Buttery Spread
    1 Tsp. lemon zest (or more to taste)
    Juice from 1/2 small lemon
    salt and pepper to taste


Combine ingredients in a pot with tight fitting lid. Bring to a boil. Stir once.
Cover and reduce heat to simmer and cook 20 minutes.
Remove from heat. let stand in covered pot for 10 minutes.
Fluff with fork and season to taste.
