    Chicken Breast, no skin, 8 ounces, cut into bite size pieces
    Olive Oil, 1 tbsp
    Onions, raw, 1 cup, chopped
    Jalapeno Peppers, 1 pepper, diced
    Curry powder, 1 tbsp
    Water, tap, 3/4 cup
    Garlic, 1 tbsp
    Mango, 6 ounces (1 mango)
    Mitsukan Rice Vinegar, 1 tbsp
    Patak's Lime Relish, 1 tbsp
    Peppers, sweet, red, fresh, 1 cup, sliced


Heat oil in wok over medium heat, add diced chicken, onions, jalapeno pepper and stir. Add garlic and red peppers. Stir fry for 10 minutes, Add curry powder, water, vinegar, lime relish and water. Let Simmer for 10 minutes. Makes 3 1-cup servings. Can serve over rice or shirataki noodles.
