Number of Servings: 3


    3 eggs
    1 cup black beans
    4 Tbsp fresh salsa
    1 tsp fresh cilantro
    6 Tbsp fat free cheddar cheese
    3 Tbsp fat free sour cream
    Chipotle Tabasco, if desired


Cook eggs as desired, scrambled or fried.
Meanwhile, heat beans 4-5 min until warm. Remove from heat, add salsa & cilantro.
To serve place one egg on plate cover with 1/3 bean mixture. Top with 2 Tbsp cheese, 1 Tbsp sour cream, and a dash of Chipotle Tabasco. Serve with corn tortillas, if desired.
