    1/3 cup of instant couscous (5 minute preparation kind)
    1/8 cup of green pepper
    ¼ cup of diced zucchini
    ¼ cup of diced yellow squash
    ¼ cup of diced white onion
    5 pieces of edamame (remove soybeans from pods)
    1 minced garlic clove
    ¼ cup of diced tomatoes
    1/2 tsp of ground tumeric
    1/2 tsp of paprika
    1 cup of vegetable broth
    6 cooked shrimp
    Cholula Hot Sauce to taste


Using a small skillet, spray lightly with Pam Olive Oil and on low heat, begin to cook the zucchini, yellow squash, green pepper, garlic and onions.

Add a little salt and pepper to taste.

Add vegetable broth to skillet. Follow with edamame, paprika, ground tumeric and diced tomatoes.

Add a few dashes of cholula hot sauce (to taste. I used 5.)

Let simmer on medium-low heat until it begins to boil.

Add couscous to skillet.

Once couscous has absorbed most of the broth, add cooked shrimp. Place top on skillet and heat on low until shrimp are hot.

Serve immediately.
