Ingredients

4 large eggs
1 pkg (10oz) frozen chopped spinach, thawed & drained
1 small onion, chopped
10 slices of Canadian Bacon
4 oz Athenos Feta Cheese with Basil & Tomato, crumbled
Directions
Preheat the oven to 350 degrees. Beat eggs lightly in medium bowl. Add spinach, onions and Canadian bacon; mix well. Spoon evenly into 12 medium muffin cups sprayed with cooking spray. Sprinkle the cheese evenly over batter. Bake for 30 minutes or until golden brown. Preferably serve warm. Makes 1 dozen or 6 servings of two muffins each.

Very tasty and easy to prepare! I used 1/2 and onion and 1/2 a green pepper, so I think you could mix and match veggies to your liking. I refrigerated mine then microwaved for 1 1/2 minutes (for one full serving) and used as breakfast on the go! GOOD STUFF - THANKS for sharing this recipe!!! - 1/4/10
