Introduction

Ingredients
-
1 can black beans, rinsed
1 can water
1/2 onion, chopped
1/2 green or yellow pepper, chopped
2oz. jar diced pimientos, drained
1 T. olive oil
1/2 can tomato paste (or 3 oz)
1/2 T. vinegar
1 t. salt
1/2 t. sugar
1/2 t. pepper
1 cup brown rice (cooked to make 3 cups)
Directions
-Saute the onion, pepper and pimientos in olive oil.
-Combine all other ingredients (except rice) and bring to a boil.
- Cover, simmer for 20-30 minutes.
-Serve over brown rice or in a tortilla.
