    1 pound dried navy beans, picked over
    1 tablespoon olive oil
    2 large onions, chopped
    1/2 cup all-purpose flour
    1 can (2cups) chicken broth, low sodium
    2 cans fat free evaporated milk
    1 teaspoon Tabasco, or to taste
    3 teaspoons chili powder
    4 teaspoons ground cumin
    1/2 teaspoon salt, or to taste
    2 7-ounce cans diced mild green chilies,
    2 lbs boneless skinless chicken breast halves, cooked and cut into 1/2-inch pieces


Soak the beans over night, then drain and rinse. Cover with cold water and cook for an hour. Drain and rinse.

Saute the onion in the olive oil until translucent.

Toast the flour until is is light brown, then combine with 1/2c of the milk in a jar and shake to mix completely. Add this mixture, the rest of the milk, chicken broth, and spices to the onion, and simmer gently for about 5 min, until thickened.

Add the remaining ingredients, including beans, and simmer for 20 min.

Serve with grated monterey jack cheese and sour cream.
