    1 Tbs butter
    2 large leeks, washed and chopped
    1 clove garlic, minced or pressed
    2 cups fresh broccoli florets
    6 eggs
    2 cups 1% milk
    1 cup shredded cheddar cheese
    salt and pepper to taste


Melt butter in large cast-iron skillet. Saute leeks and garlic together on low-medium heat until tender, adding water in small amounts if necessary to prevent sticking. Add broccoli and cook another 5 minutes. Meanwhile, beat eggs and milk together in a large measuring cup or medium mixing bowl. Stir in grated cheddar cheese, salt, and pepper. Pour egg mixture over vegetables in frying pan. Cook without stirring until edges of egg mixture are firm (about 10 minutes) and then transfer frying pan to 325 degree oven for 15 minutes or until center is set.
