Ingredients

    0.25 tsp Oregano, ground
    2.0 clove Garlic
    0.5 large Onions, raw
    0.5 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Sweet peppers (bell)
    0.75 tsp Cumin - ground (1 tsp)
    1.0 cup Beans - Bush's Black Beans Reduced Sodium
    2.0 serving Great Value Instant Brown Rice (1/2 cup serving size)
    4.0 serving Giant Eagle Shredded Sharp Cheddar Cheese (1/4 cup, 28g serving size cmr)
    1.0 serving Great Value Extra Virgin Olive Oil (1 Tbsp. serving size cmr)

Directions

Heat in a large skillet the peppers, garlic, onion in the olive oil until all are tender (about 8 minutes). Add the beans, rice, cumin and oregano, and heat through. Add 1 cup of the cheese and stir through till melted. Remove from heat and sprinkle with the remaining cheese. Serving Size: Makes 3 servings
