Number of Servings: 4


    2 cups brown rice (I used Instant Brown Rice to save time)
    3 chicken breasts
    1 tbsp Olive oil
    2 cloves Garlic - or as much to personal taste
    2 tbsp Soy Sauce (low sodium better)
    1 tbsb Barbeque Sauce
    1 package frozen mixed veggies ( I used a stir-fry mix with mushrooms, peppers, corn, broccoli, water chestnuts, snap peas and cauliflower)


Cube chicken and sautee in skillet on med. heat with olive oil, soy sauce, garlic and barbeque sauce until no longer pink.
When chicken is fully cooked, add frozen vegies (rinsed) and saute until mixed, lower heat.
Let chicken and vegetable mixture simmer. Meanwhile, prepare Brown rice per package instructions.

Layer Stir-Fry mixture over 1/2 cup brown rice
Makes Four Servings
