Ingredients

    1 6 oz. can Solid White Albacore Tuna in Water, drained
    2 tbsp. Hot Salsa
    2 tbsp. Light Sour Cream
    1 Large Green Pepper
    2 deli thin slices of Pepper Jack Cheese
    seasonings to taste

Directions

Preheat oven to 350. Slice pepper in half and remove seeds. Combine all ingredients except the pepper. Season to Taste. Fill each half of the pepper with half of the tuna mixture. Top each half with a slice of cheese. Place in a baking dish sprayed with cooking spray. Cook for 20 minutes or until cheese is browning on edges and the pepper is cooked. Makes 2 servings.
