Introduction

Ingredients

1 tbsp Olive Oil
2 cup, chopped Carrots, raw (about a bag of baby carrots, chopped)
3 cups Brussels Sprouts, quartered
3 slices Hickory Smoked Bacon, chopped
1/3 cup Cranberries, dried, sweetened (craisins)
Tips
This can be served hot or cold, it's just as good! Also, this can be made vegetarian by subbing out the bacon with the fake stuff.
Directions
Pour olive oil in glass or metal baking dish, and spread it around. You could also use pan spray. Add chopped carrots, Brussels Sprouts and cranberries to the pan. Stir. Sprinkle the bacon on top. Roast in a 425 degree oven for 30 minutes, or until vegetables are soft enough to pierce with a fork.
