Number of Servings: 4

Ingredients

    8oz Mushrooms, fresh
    1 cup Spinach, fresh -finely chopped
    1 tsp Garlic powder
    1 tsp Onion powder
    1 large Egg, fresh, whole, raw
    1 tbsp Extra Virgin Olive Oil
    1/4C Bacon (Harmel) real bacon bites for salads
    1 cup Colby and Monterey Jack Cheese shredded

Directions

*preheat oven to 400*

*start by removing mushroom stems, and cleaning out the underside on cap, the gills, then set caps aside
*next process the gills & stems into small pieces, we will use every part of the mushroom.

*combine mushroom pieces with egg and olive oil and stir.
*next add in the onion and garlic, stir again
*now add the cheese, bacon and spinach, mix well

*once everything is well combined begin to stuff the mushrooms using a small spoon.

*place on a 8x8 PAM sprayed pan

bake for 15 minutes

****if you have any extra stuffing left-it is great melted over baked chicken, I typically serve them together
