Ingredients

    4 cup Beef Broth - Swanson Low Sodium
    1 cup Great Value Italian Stewed Tomatoes with Basil, Garlic, and Oregano
    5 serving carrot, 1 raw (7-8" long)
    3 cup Spinach, fresh
    3 cup, chopped Peppers, sweet, red, fresh
    3 stalk, large (11"-12" long) Celery, raw
    4 cup Cauliflower, raw
    4 cup, chopped Cabbage, fresh
    3 cup, pieces or slices Mushrooms, fresh
    3 tbsp Extra Virgin Olive Oil

Tips

Stores well in fridge for a few days, good for a meal or a starter.


Directions

Olive oil in pot , toss in chopped onions, celery, carrots, cook about 5-10 min, then add cabbage, cauliflower, peppers, mushroom spinach keep stirring. Add can of tomatoes and 4 cups beef broth. Pepper to taste. Cook till veggies are tender.
