    Collard Greens, 5 Bunches or 20 Cups Chopped
    Olive Oil, 1/4 Cup
    Garlic, 2 Cloves Minced
    Onions, 1 Cup Chopped
    Chicken Stock, 5 Cups
    Smoked Turkey Leg
    Hot Sauce, Salt, and Pepper to taste
    Cider or White Vinegar, 1 Tbsp


Heat oil in a stock pot over medium heat. Add garlic and onion, stirring until fragrent, not brown. Add stock and turkey leg. Cover pot and simmer for 30 minutes. Add greens to the pot and turn up heat to medium high. Cook and stir occassionally for another 30 minutes. Turn down heat to medium and season to taste. Continue to cook for another 45 minutes. Drain the greens and serve. Add a dash of vinegar to individual servings. Don't throw away the liquid from the greens!! This is essential for reheating any leftovers.
