Introduction

I find this to be a great filler on days when I am afraid I will blow my calories..if I have a double serving for dinner with a whole grain roll, I can still have dessert! Number of Servings: 4

Ingredients

    6 cups water
    8 oz cooked chicken breast, shredded
    1/2 cup raw or frozen carrots, sliced
    1/2 cup raw onion, chopped
    1/2 cup frozen yellow corn
    4 chicken bouillion cubes
    1/2 cup prepared instant brown rice
    1 Tbsp curry powder
    1/2 tsp garlic powder

Directions

Place water, carrots, onion, corn and bouillion cubes into a 2 qt saucepan and bring to a boil.

When vegetables are tender and bouillion has dissolved, add shredded chicken, brown rice and spices. Reduce heat and simmer until chicken is heated through.

Makes (4) 1 1/2 cup servings
