Introduction

Ingredients

3 tsp Gelatine Powder (by NIKKI_G2008)
24 tsp Halefresh Erythritol
500 grams Cream Cheese
4 tbsp Lemon Peel
2 tsp Lemon Juice 'Real Lemon' 100% juice
200 mL Boiling Water, tap
200 mL Cold Water, tap
236 grams Quest Gingerbread Cookie
Directions
Cheesecake Base:
Pulse Quest Gingerbread Cookies in a food processor. Once pulsed press into a nine inch pie plate. Bake for 12 minutes at 325. Set aside while make filling
Lemon Cheesecake Filling:
Using a micro planer zest fresh lemons to gather 4 loose tbsp of fresh lemon zest. Pour boiling water into a large jug and whisk in the gelatin powder. Whisk until all dissolved.
Add the remaining cold water.
Squeeze remaining lemon to gather fresh juice.
Add the cream cheese, lemon zest, lemon juice and sweetener.
Using a stick blender or KItchenAid, blend on a slow speed until smooth and lump free, then increase speed slowly to fluff mixture.
Pour onto the prepared base and level with spatula
Refrigerate until set.
