    8 large eggs
    1/2 cup 2% Milk
    1 cup low-fat shredded cheese (choose your personal favorate)
    4 oz diced lean ham
    1/2 cup chopped onion
    1 cup chopped broccoli florets
    garlic powder, salt and black pepper to taste


12 mini muffins

Steam the broccoli in the microwave for about 3 minutes - helps it to be softer in your quiche. Whip eggs, milk and seasonings until fluffy. Add ham, broccoli and cheese. Spray a regular muffin pan with non-stick spray. Scoop just over 1/4 cup of egg mixture into each muffin cup. Use all of the mixture so you may want to divide the rest equally in the 12 muffin cups (there's always a little left). Bake at 350 for 30 min. Remove from pan immediately. Serve warm.

Feel free to change the meat & veggie to your liking. I have used turkey and spinach as well.
