Introduction

This is the best banana bread recipe I have ever found. Lots of banana flavor in every bite! Ingredients

    5 tbsp butter
    1/2 cup granulated sugar
    1/2 firmly packed light brown sugar or 1/4 cup Splenda brown sugar blend
    1 large egg
    2 egg whites
    1 tsp vanilla extract
    1 1/2 cups mashed, very ripe bananas (can add up to 2 cups)
    1 3/4 cup all-purpose white flour
    1 tsp baking soda
    1/2 tsp salt
    1/4 tsp baking powder
    1/4 cup heavy cream (do not whip)
    1/2 cup chopped walnuts (optional)

Directions

1) Preheat oven to 350. Spray bottom of loaf pan, bundt pan or 12 count muffin pan with non-stick cooking spray.

2) Beat butter in a large bowl until light and fluffy. Add granulated sugar and brown sugar; beat well. Add egg, egg whites and vanilla; beat until well blended. Add mashed banana and beat on high speed for 30 seconds.

3) Combine flour, baking soda, salt and baking powder in a seperate medium bowl. Add flour mixture to butter mixutre alternately with cream, ending with flour mixture. Add nuts and mix well.

4) Pour batter evenly into loaf, bundt or muffin pan (will have some batter left over for addition muffins; yields approx 18 muffins). Bake until browned and toothpick inserted near center comes out clean, about 1 hour 15 minutes for the loaf or bundt pan; about 25-30 min for muffins.

5) Cool in pan for 10 minutes. Remove from pan; cool completely on wire rack. Enjoy!
