Ingredients

4 medium Summer Squash
1 tbsp Basil
1 serving Green Onion (fresh-1 stalk)
0.5 tsp Thyme, ground
0.75 tsp Garlic powder
1 cup Lucerne Shredded sharp cheddar cheese
8 tbsp Parmesan Cheese, shredded
1 dash Salt
1 dash Pepper, black
Tips
Be sure to cook longer the first time out if you prefer your zucchini to melt in your mouth!
Directions
Preheat oven to 350 degrees F. Spray and 8 x 8 in baking dish with olive oil or non-stick spray.
Wash the zucchini and slice, about 1/8" thick. Wash basil, spin dry or dry with paper towels and finely chop. Wash green onion and finely slice into 2 tablespoons worth.
In a medium bowl, combine the zucchini, basil, green onions, thyme, garlic powder, parmesan, and 1/2 cup of cheddar and stir together until the veggies are coated with cheese and the herbs are well-distributed. Season with salt and pepper, to taste.
Place the mixture in the baking dish and bake uncovered for 30 minutes. When the zucchini is nearly cooked through, take the dish out of the oven and sprinkle the remaining 1/2 cup of cheddar over the top. Replace the dish in the oven and bake 15 minutes more, or until the cheese is melted and nicely browned and the zucchini is cooked through to taste.
Serve hot.
