Ingredients

1 stalk, large (11"-12" long) Celery, raw
0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
1.5 tbsp Lite Mayonnaise, Fred Meyer (Kroger)
4 oz Bumble Bee Solid White Albacore in water, (4 oz) drained, one whole 5 oz can
3 cup shredded Lettuce, red leaf (salad)
1 tsp Lemon Juice 'Real Lemon' 100% juice
Directions
On large cutting board, cut and remove ends and peel the red onion, and then cut one thick slice, and dice it to make about 1/4 cup chopped onion.
Trim one large stalk of celery and slice and dice into small pieces.
Open and drain the water out of one whole 5 oz can of tuna. With fork, flake the tuna into a mixing bowl. Add one teaspoon lemon juice and mix into the tuna.
Add 1-1/2 tablespoons of mayonnaise, the celery and onion to the tuna and mix well.
Wash 3 or 4 large leaves of red leaf lettuce and spin well. Chop into large bite size pieces, makes about 3 cups. Place onto large serving plate and top with the tuna salad.
Eat and enjoy!
