Ingredients

    2 quarts Free Range Chicken Broth or chicken bone broth
    3-4 cups chunked chicken from picking roasted chicken
    3 large stalks organic celery
    3 large organic carrots
    3 large onions
    2-3 heads roasted garlic
    4 oz soft green, e.g., baby kale medley
    4 tbsp Grass-Fed Butter
    3 cloves Garlic, minced
    1 tbsp Tarragon, ground
    1 tbsp Extra Virgin Olive Oil
    1 tbsp Coconut Aminos
    1 tsp sea salt or to taste
    1 tsp fresh ground black pepper or to taste

Tips

Roast the garlic ahead of time -- see any cooking site for roasting instructions.


Directions

Chop veggies moderately small; chop green coarsely or leave whole, if desired. Gently brown the butter over moderate heat until just golden, then add the aromatics & veggies, except for greens. Saute for 5-7 minutes or until carrots begin to soften. In the meantime, squeeze the goodies from the roasted garlic. Add chicken & toss & saute for 2-3 more minutes. Add everything else but greens & simmer for 10 minutes. Add greens & simmer until greens are done to your liking. Taste & adjust seasonings. Serve & sigh with pleasure.
