A delicious, high-fiber pasta dish! A delicious, high-fiber pasta dish!
Number of Servings: 8


    1 lb. whole wheat penne pasta, cooked
    2 Tbsp. olive oil
    1 clove garlic, chopped
    1 can cannellini beans, or other white beans
    1 can diced tomatoes (no salt added)
    6 oz. package fresh spinach
    salt and pepper, to taste


1. Cook penne paste to al dente.
2. In a large skillet, or electic skillet, saute garlic
in olive oil for 1-2 minutes.
3. Add cannellini beans and cook for 3-4 minutes.
4. Add tomatoes and cook for 4-5 minutes.
5. Add spinach and heat until cooked down.
6. Add salt and pepper, to taste.

Serve over pasta. Garnish with parmesan cheese. Great with crusty Italian bread.
