Ingredients

    1 cup White Whole Wheat Flour
    1.5 cup all purpose flour
    2/3 cup Granulated Sugar
    1.5 tsp Rosemary, dried, chopped
    1 tsp Baking Powder
    0.5 tsp Baking Soda
    0.5 tsp Kosher Salt
    3 Large Eggs, beaten
    1/2 cup Extra Virgin Olive Oil
    1/2 cup Plain Yogurt (not Greek)
    3 fl oz Orange Juice
    1 tbsp Orange zest
    1 tsp Vanilla Extract
    1 cup, whole Cranberries, fresh or frozen

Directions

Heat oven to 350 degrees F. Lightly coat a 9" x 5" loaf pan with cooking spray.

In large bowl, whisk flours, sugar, rosemary, baking powder, baking soda, and salt. In medium bowl, stir eggs, oil, yogurt, juice, zest, and vanilla until combined. Gently pour into flour mixture. Stir until blended. Fold in cranberries. Pour into pan. Bake until wooden pick inserted in center comes out clean, about 55 minutes.

Remove from oven. Cool in pan for 20 minutes. Remove from pan and cool completely.

Serving Size: makes 16 slices of 1/2" each, serving is 1 slice
