Number of Servings: 4

Ingredients

    16 oz veal shoulder or leg cutlets
    1 1tsp Olive Oil
    2 medium Red Bell Peppers, cut into strips
    1 clove Garlic, minced
    1/2 of a large onion, sliced
    1/2 cup Marsala Cooking Wine
    1 cup Beef broth
    1/4 tsp Salt
    1/8 tsp black pepper
    1 tsp chopped parsley

Directions

Cut veal cutlets into bite size pieces. Heat oil. in a large saucepan. Stir fry peppers, onion and garlic. Season with salt and pepper. Remove veggies from pan and set aside. Spray pan with olive oil spray. Stir fry veal until browned. Add marsala and beef broth. Return veggies to pan. Simmer for 3 minutes. Season with chopped parsley.
