Ingredients

    8.0 serving 4 boneless skinless chicken breast halves
    8.0 serving medium onion cut into wedges
    8.0 serving 2 teaspoons ground cumin
    8.0 serving two cans 14.5 oz each of chicken broth
    8.0 serving one package 10 oz frozen corn
    8.0 serving one and a half cups of picante or salsa sauce
    8.0 serving one sweet red pepper 1 green pepper-chopped
    8.0 serving one can black beans-rinsed
    8.0 serving 2 tablespoons cornstarch

Directions

1) In 5 court saucepan or larger, cook chicken and onion in oil until chicken juices run clear. Stir in cumin. Add broth, corn, picante, or salsa, bring to a boil. Reduce heat, cover and simmer for 15 minutes. Stir in peppers. 2) Combine cornstarch and 2 tablespoons of water until smooth Stir into soup. Bring to a boil, cooked in Stir for 2 minutes or until slightly thickened. Spoon into bowls-enjoy! Serving Size: One cup
