Introduction

A good vegetarian soup for the winter months, full of vitamin A to keep flus and virii at bay. A good vegetarian soup for the winter months, full of vitamin A to keep flus and virii at bay.

Ingredients

    1 large Onions, raw, cubed
    2 serving Red Bell Pepper (Peppers, sweet, red, raw) (USDA), cubed
    0.5 cup Lentils, cooked
    1 medium (2" dia, 5" long, raw) Sweet potato, cooked, baked in skin, without salt, skinned and cubed
    1 cup Beans, red kidney
    1 cup Peas and carrots, frozen
    a few cloves of garlic, sliced
    salt, pepper, oregano, and sweet Moroccan paprika to taste

Directions

Fry onion and garlic and red pepper in a bit of canola oil until the onion is clear
add spices to taste, mix in to fried vegetables
add lentils, kidney beans, peas and carrots, and sweet potato
add several cups of water to cover vegetables
Bring to a boil, then simmer for half an hour or so
