Ingredients

    1.75 cup Del Monte Sweet Corn Cream Style
    1 serving Eggs - Jumbo Grade A Eggs - California Ranch Fresh - 1 Egg = 1 Serving (63g)
    1 cup Colby and Monterey Jack Cheese shredded
    10 oz rotel tomato w diced green chilis (by REDEE2DROP)
    16 ounces Chicken Breast (cooked), no skin, roasted
    20 cracker Saltine Crackers (Saltines)

Tips

Serve for any high protein meal of the day- for breakfast, add two eggbeaters and 1/4 tsp vanilla. Great with a cup of soup for lunch. Serve with mixed green salad for a low calorie, satisfying dinner.


Directions

preheat oven to 350 degrees. drain tomatoes. add all ingredients and mix well. pour into 2 quart baking pan and spread evenly. bake for 1 hr. casserole should be a little raised and browning on top.
