An omelet style dish that is fast, easy, filling, and very good! An omelet style dish that is fast, easy, filling, and very good!
Number of Servings: 4


    6 eggs, beaten
    4 tortillas, cut into bite size pieces
    4 sausages, about 3-4", cut into pieces, the spicier the better!
    1/4 cup green bell peppers, chopped
    1/4 cup red green bell peppers, chopped
    1/4 cup onion, chopped


Cook sausage, peppers, and onions until browned and as tender as you like them and remove from pan.

Spray pan with nonstick cooking oil (or 1 TBS oil, not included in ingredients for calories), toss in tortilla pieces and cook until they turn golden brown and slightly crispy.

Add sausage, pepper, onion mixture back to pan. Add in eggs. Cook until eggs are done. Serve.

This is great alone because it's very heavy but if using as a sidedish, I'd add toast, grits, and/or hashbrowns.

*It really doesn't need any spices so you can forgo the s&p. The sausage spices it up quite nicely.

*I think potato pieces (or hash browns) would be good in this too. I'll try that next time. =)
