Introduction

This is one of my very favorite recipes from Rachel Ray-30 min meals. I made this several times the way she did it, cal 569 fat 46g. Needless to say I have revamped it. Ingredients

    olive oil spray
    1 lg Shallot diced ( can use onion or scallions)
    1/2 C Mushrooms, sliced
    1 TB flour
    1/2 C White Wine
    1/2 C Swanson Chicken Broth 99% Fat Free, 20 Scallops ( 5 per serving)
    2 TB Land O Lakes, Spreadable Butter with Canola Oil,-
    1 clove Garlic, minced
    1/2 C Fat Free Half and Half,
    1/2 C Sour cream, fat free,
    nutmeg salt pepper to taste
    few drops hot sauce ( optional)
    1/2 C mozarella reduced fat, shredded
    1/4 C plain bread crumbs
    2 TB Basil, chopped fine

Directions

Spray small pan with olive oil spray, over medium heat and add the shallots and mushrooms, cook 5 minutes. Add 2 tablespoons reduced fat,butter and flour to softened shallots and mushrooms and cook 1 minute then whisk in wine, reduce 30 seconds, add stock and bring to a bubble. Stir in fat free 1/2 & 1/2 and sour cream, and heat through. Season sauce with nutmeg, salt and pepper and a couple dashes hot sauce, then reduce heat to low.
Heat a skillet or cast iron pan over high heat. Season the scallops with salt and pepper and spray lightly with olive oil spray. Sear the scallops to caramelize 1 to 1 1/2 minutes on each side then cover them with sauce, bread crumbs and basil and finish in oven about 6 to 7 minutes until brown and bubbly. Sprinkle with Mozarella and serve!
I served this with a salad, and garlic bread. It was a big hit.
