    White Rice, cooked ,long grain, 800 grams
    *Peppers, sweet, red, fresh, 2 large (2-1/4 per lb, approx 3-3/4"
    Green Peppers (bell peppers), 2 cup, strips
    Peas, frozen, 1 cup
    Yellow Sweet Corn, Frozen, 1 cup kernels
    Beans, red kidney, 1.5 cup
    Chicken Breast, no skin, 400 grams
    Olive Oil, 4 tbsp
    Carrots, raw, 1 large (7-1/4" to 8-1/2" long)
    Salt & Pepper


Spray skillet with cooking spray. Chicken and brown. Remove chicken and keep warm. Add peppers and cook until just tender. Boil peas, corn and carrots until just tender.

Combine all ingredients and stir through olive oil, salt and pepper. Serve.
