Ingredients

    L. zucchini, cut
    lg onion sliced
    2 scallions sliced
    peas - removed from pod
    celery sliced
    1 tbsp apple cidar vinegar
    1/2 c lentils
    1/2 c long grain brown rice
    2-3 c. water
    2 small potatos - unpeeled & cut
    1c sour cream

Directions

sautee onion and scallions in butter
put all ingrdients (except sour cream) including sauteed onion mixture in lg pot. Stir occasionally boil until everthing is soft. Blend, leaving some chunks for texture. Put in bowls, pepper to taste, then put on a dallop of sour cream.
