Easy, no-stir polenta like my Italian grandmother made Easy, no-stir polenta like my Italian grandmother made

    2 quarts cold water
    2 2/3 cup cornmeal
    5 teaspoons salt


You can combine the water and corn meal several hours before cooking. I use Quaker brand...not fancy (expensive) corn meal sold as "polenta."


Pour water into large, heavy-bottomed pot. Gradually stir in the polenta and salt. Bring slowly to a boil, stirring constantly until it thickens (about 5 minutes),. Cover the pot, leaving room for steam to escape. Cook, over low heat without stirring, 45 to 90 minutes, depending on consistency desired.

Traditionally, cook until very firm. Spoon the polenta into a large bow,l, and invert on a cutting board. Slice with a string! (or a knife)

Serve with chicken cacciatore, pot roast, stew, or any dish with "gravy."
