Introduction

Ingredients

    4 cup, sliced Zucchini
    2 lb. (32oz) Ground beef, lean
    1 cup, chopped Onions, raw
    1.50 cup dry Minute Rice Instant White Rice (1/2 Cup Dry = 1 Cup Prepared)
    2 tsp Garlic Salt
    2 tsp Oregano, ground
    4 cup (2 pints) Great Value lowfat cottage cheese (small curd)
    3 cans condensed (4.5 cup) Campbell's Cream of Mushroom Soup )
    2 cup Cheese (1 lb. bag) sharp cheddar, grated

Directions

Cook zucchini in boiling water till barely tender, drain. Saute beef with onion until meat is lightly brown, add rice and seasonings. Place half zucchini in bottom of large roasting pan 17x13 or shallow casserole dish (will be very full in a 13x9 pan). Then cover with beef mixture and cottage cheese. Add remaining zucchini, then spread soup over all. Sprinkle with cheese. Bake uncovered at 350 degrees for 45-50 min. or until bubbly hot.
