Ingredients

    1 small can corn
    2 bell peppers any variety
    1/2 c brown rice
    1 can diced tomatoes (no salt added)
    salt pepper to taste

Directions

cut peppers in half length wise and remove all seeds and stem.
place peppers on plate and microwave for about 5 minutes or unil slightly soft
meanwhile, place the rest of the ingredients in a large saute pan and bring to a boil and let simmer covered for about 5 minutes.
Place 1/4 of the tomatoe mixture in each of the halves of tomatoes and place in a 350 degree oven for about 15 minutes or until hot
makes 4 servings 1/2 of a pepper and a 1/4 of the mixture per serving
