Ingredients

    * Chicken Breast, no skin, 16 ounces (remove)
    * Canned Tomatoes, 3 can
    * Onions, raw, 1 medium (2-1/2" dia)
    * Green Peppers (bell peppers), 0.5 cup, chopped
    * Olive Oil, 2 tbsp
    * Chicken Broth, 1 can (10.75 oz)
    * Tomato Sauce, .5 cup
    * Chili powder, 3 tbsp
    * *Cumin seed, 1 tbsp
    * Thyme, ground, 1 tbsp
    * Salt, 1 tsp
    * Cilantro, raw, 10 tbsp

Directions

Saute fresh ingredients in olive oil until cooked through. Add spices and tomatoes and sauce. Cook 5 minutes, then add broth. Let simmer for 20 minutes, adding cilantro at the end. Serve with tortilla chips, sour cream and cheese garnish if desired.
