Introduction

This is a family favorite for us in the summer. You can cut back on calories, fat and sodium by reducing the sauce to a small amount. I also did not know how to calculate a marinade so it's like you are eating all those ingredients, but you are not. Finally I usually get swordfish that is closer to 4 ounces. Ingredients

    Juice of 1 orange
    Grated zest of ½ orange
    1 Tbs. olive oil
    ½ tsp salt
    ½ tsp. coarsely ground black pepper
    2 swordfish steaks (6 oz. each), 1 ½ inches thick
    ¼ cup of fat-free mayonnaise
    ½ Tbs. sweet pickle relish
    ½ Tbs. minced fresh onion
    1/2Tbs. capers, drained
    1/2tsp. hot pepper sauce (such as Tabasco)
    ¼ tsp. oregano
    Sliced tomato
    Slice red onion
    Bibb lettuce
    2 whole wheat hamburger rolls

Directions

In a bowl large enough to hold the steaks, stir all the ingredients, except the swordfish, together. Add the steaks, and turn them in the marinade. Cover loosely and refrigerator for several hours.
While fish is marinating, combine fat-free mayonnaise through oregano, and chill.
Prepare grill and coat grill with some oil. Grill steaks 3 to 4 minutes a side or until desired degree of doneness.
Serve on toasted whole wheat rolls with lettuce, tomato, onion, and chilled sauce.
