Ingredients

    1 cup Quinoa,
    1 medium whole Red Ripe Tomatoes
    1 Avacado
    1/4 cup Cilantro,
    2 tbsp Lime Juice
    2 tbsp Olive Oil
    Salt dash
    1/2 tsp white pepper

Directions

Rinse quinoa. Add to 1 1/2 cups of water and bring to a boil. Cook 10 minutes, remove from heat and let cool for 5 minutes. Fluff with a fork. Transfer to a bowl and let quinoa completely cool. Dice tomato and avacado and mince cilantro. Add to cooled quinoa. Squeeze lime over quinoa and add salt pepper and oil. Refrigerate for at least an hour for flavors to infuse.
