    2 cup Baby Green Peas, thawed if frozen
    6 oz Linguine, Whole Wheat
    4 tbsp Extra Virgin Olive Oil, divided
    1/2 lb Yukon Gold potatoes, cut into 1-inch pieces
    1 tsp Kosher Salt
    1/2 tsp Pepper, black
    6 medium (4-1/8" long) Scallions, chopped
    10 tbsp grated Parmesan Cheese, divided


Have potatoes and green onions chopped prior to beginning recipe.


Cook linguine by package instructions; drain and return to pot. Add 2 tbsp olive oil and toss.

While pasta cooks, put potatoes in a large pot and cover with water. Bring to a low boil, add salt, and simmer for 12 minutes. When the potatoes have 2 minutes of cooking time left, add peas and continue cooking. Drain vegetables and add to pasta. Add 1/4 cup Parmesan, 2 tbsp olive oil, and the pepper. Toss.

Divide into serving bowls and top each serving with 1 tbsp grated Parmesan.
