    2 boneless, skinless chicken breasts, cut into bite-sized pieces
    1/4 c. flour
    2 T. vegetable oil
    3/4 c. uncooked brown rice
    1/4 c. water
    1 can fat free chicken broth
    seasonings to taste
    2 T. margarine


Dredge the chicken pieces in seasoned flour. (I use cayenne pepper and garlic powder.) Brown the floured chicken in a little vegetable oil. Put rice in a greased casserole dish, and season to taste. (I use onion salt, garlic powder, and pepper.) Arrange chicken on top of the rice, pour water and broth over it. Dot with butter. Cover and bake at 350 for one hour. Serve with your favorite vegetable.
