Introduction

My wife had an over-abundance of mustard greens in her garden to I made soup! My wife had an over-abundance of mustard greens in her garden to I made soup!
Number of Servings: 5

Ingredients

    8 packed cups chopped fresh mustard greens (~12 ounces)
    5 links Italian turkey sausage (1 pound), sliced
    1-10 oz can RO*TEL original diced tomatoes and green chilies
    1-15 oz can red kidney beans
    1/2 medium (2-1/2" dia) onion, diced
    4 cups vegetable broth
    1 tsp. Italian Seasoning
    Salt and pepper to taste

Tips

Mix everything well once in the crock pot.


Directions

1. Broil sausages until half done. Then slice into pieces.
2. Add all ingredients and sausages to slow cooker.
3. Cook on high for 2-3 hours until mustard is softened and sausages are thoroughly cooked.
4. Makes 5-2 cup servings.
