Ingredients

    0.5 large Onions, raw
    1 small Peppers, sweet, red, fresh
    1 serving 1 Med. Green Bell Pepper
    1 sweetpotato, 5" long Sweet potato
    1 cup corn kernals (by JILLIANNOELLE)
    1.8 cup Beans, black
    1 tsp Spices, Cumin Powder (by MZTRACY)
    1 tsp Paprika
    1 tsp Garlic powder
    0.5 tsp Salt
    2 cup Salsa

Tips

Calculate additional toppings / rice. Can serve on a bed of lettuce.


Directions

INSTRUCTIONS
Heat a large pan over medium heat and add the olive oil and onion. Sauté onion for 2 minutes and then add the peppers and sweet potato. Cook vegetables until tender, 7-10 minutes.
Next, add the black beans, corn and all the spices. Stir and let cook for 2 minutes.
Pour enchilada sauce in, mix until combined and then cook until everything is heated through, about 5 minutes.
Serve over rice or quinoa , if desired, and top with your favorite toppings. (Optional toppings: Diced avocado, tomato, cilantro, salsa)
