Introduction

Number of Servings: 4

Ingredients

    360 grams cubed sweet potato
    1 Tbsp Olive Oil
    200 grams Onions, thinly sliced
    700 grams Cabbage, thinly sliced or shredded
    275 grams Ham, cut into 3/4-inch cubes
    1 can Cream of Mushroom Soup
    1 cup Shredded Cheddar Cheese

Directions

PRE-HEAT oven to 400 degrees

HEAT a very large oven-proof frying pan (like cast iron) over medium-high heat. When hot, add the oil.

ADD the sweet potato and fry for a couple of minutes. Add the onion & cabbage and stir to combine. Add about 1/2 cup of water, cover and saute for about 5 minutes.

REMOVE the cover, add the soup and ham and stir to coat everything with the soup. Transfer to oven.

BAKE for 20-30 minutes until hot & bubbly.

TOP with cheese and serve immediatley.
