    3 egg whites
    1 whole egg
    1 1/4 cup frozen stir fry vegetables (or more)
    1/4 cup grated Parmesan cheese
    Salt to taste
    Grated black pepper to taste


Thaw vegetables in a small saucepan. Add fresh vegetables and onion, if desired. Heat a medium skillet. Meanwhile, beat egg whites and whole egg. Remove thawed vegetables from heat and drain well. Add eggs and Parmesan to vegetables and mix well. Spray the skillet with zero calorie cooking spray.

Pour egg mixture into the skillet and spread evenly. Cover and cook for about 5 minutes, until bottom is golden and top is mostly set. Top the skillet with a plate and flip over quickly. Slide the frittata, now upside down, back into the skillet. Cook uncovered until bottom is done.

Slide completed frittata back onto the plate, and let cool slightly. Cut into wedges and serve.
