Introduction
Sweet potatoes and carrots seasoned and grilled in foil packets. Sweet potatoes and carrots seasoned and grilled in foil packets.Number of Servings: 4
Ingredients

3 sweet potatoes, 5" long Sweet potato
3 small (5-1/2" long) Carrots, raw
2 tbsp Extra Virgin Olive Oil
1 tsp Paprika
1 dash Salt
2 tsp Garlic powder
1 dash Pepper, black
2 tsp Dark Brown Sugar, Pure Cane Sugar
Directions
° Peel Sweet Potatoes and Carrots then slice or cube them, set aside in mixing bowl.
° Mix all dry ingredients together (S&P, Garlic powder, Paprika and brown sugar).
° Drizzle Olive Oil over the sweet potatoes and carrots then mix until they are coated well.
° Add dry mix and stir until evenly coated.
° Cut four (4) pieces of aluminum foil and stack them ( makes for easy assembly).
° Optional - spray the foil with cooking spray to help keep the food from sticking.
° Pile equal amounts onto each piece of foil, fold and close the foil into a little packet.
° Place directly on grill for ten minutes, then flip, leave for ten more minutes before flipping a final time - leave for 5 - 10 mins longer (I sprayed the bottom of each foil packet with cooking spray to keep the foil from sticking to the grill and ripping open while cooking).
Serving Size: Makes four individual packets.
