    2 cup lentils, green, dry, rinsed
    1 tbsp Coconut Oil
    1 cup, chopped Onions, raw
    1 stalk, large (11"-12" long) Celery, raw, chopped
    3 clove Garlic, minced
    1/4 cup white wine
    1 cup, chopped Carrots, raw, diced
    1 14-ounce can Diced Tomatoes
    5 1/2 cup Vegetable Broth
    1/4 tsp Pepper, black, freshly cracked
    1/2 tsp Dried Thyme Leaves
    1/4 tsp Salt
    2 bay leaves


For extra veggies in the meal, add a handful of baby kale or spinach to the bottom of your bowl and ladle the soup on top of it.


Heat coconut oil in the bottom of an Instant Pot on the saute setting. Add onion, garlic, and celery and saute, stirring occasionally, for about 10 minutes, until onions are translucent and starting to brown. Add the wine and stir. Continue to cook on saute setting until wine has cooked off.

Add carrots, tomatoes, lentils, bay leaves, vegetable broth, pepper, salt, and thyme. Stir.

Place lid on Instant Pot and turn to Bean/Chili setting. Set timer for 14 minutes and vent in the Sealed position.

When the timer goes off, release the pressure. Stir the soup and add additional salt if needed.
