    1 tbsp Chili powder
    1.5 tsp Cumin (ground) (by IVORYGRL1)
    1 tsp Paprika
    0.25 tsp Cayenne Pepper (Ground)
    0.25 tsp Salt
    0.25 tsp coriander, ground (by GOLDENDAZ)
    0.5 tbsp Extra Virgin Olive Oil
    1 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    3 serving Garlic, cooked (1 clove / serving)
    2 cup Bell peppers (Green, Red, Yellow, Orange)
    1 serving Jalepeno Pepper- 1 pepper (by SRATERMAN)
    0.5 cup kernels Yellow Sweet Corn, Frozen
    1.8 cup Del Monte Diced Tomatoes, No Salt Added
    1 cup Tomato Sauce
    2.5 cup, chopped Kale
    1.8 cup Beans, black
    3 cup Brown Rice, medium grain
    0.5 serving Kirkland Organic Tortilla Chips (14 chips=1 oz)
    2 serving Cheese, Dairy-Free, Daiya, Mozzerella Style


1. Combine spices to make Tex-Mex spices, set aside.
2. Preheat oven to 350 F. Lightly oil large casserole dish.
3. In wok, heat oil (or use water!) over medium heat - add onion, peppers, and saute for 7 minutes until soft. Season w/ black pepper.
4. Stir in Tex-Mex spices, corn, diced tomatos, and their juices, tomato sauce, kale, beans, rice and 1/4 cup of the vegan cheese. Saute a few minutes.
5. Pour mixture into casserole dish. Sprinkle crushed chips and smooth out the top along with remaining cheese. Cover w/ a lid or foil and bake for 15 minutes.
6. Uncover dish and cook another 5-10 minutes until bubbly and lightly golden on the edges.
7. Scoop casserole into bowls and add any desired toppings (green onions, salsa, avocado, corn chips, etc...)
