Ingredients

    2 Tbsp Whey Protein Isolate - Super Advanced Whey Protein
    2 Tbsp Splenda No Calorie Sweetener
    2 tsp cocoa powder, Hersheys Special Dark, unsweetened
    1/4 tsp Baking Powder
    1/8 tsp Instant Coffee
    1 large Egg, fresh, whole, raw
    2 tbsp Butter, unsalted, melted but not hot
    1/4 tsp Vanilla Extract

Tips

Mix the dry ingredients together in advance and store in an airtight container in the pantry. When you want a quick treat, melt the butter, add the egg and dry ingredients. Stir until smooth, then proceed with the baking step.


Directions

Generously grease two 7-ounce ramekins or coffee mugs with butter or coconut oil.

Whisk together all the dry ingredients. Add eggs, butter, and vanilla extract. Mix until smooth. Taste for sweetness and adjust as desired.

Divide the batter between the greased ramekins or mugs. Microwave each for 1 minute. Allow to cool for at least 1 minute before serving. The muffins will firm up as they cool.

NOTE: I used a mix of sugar substitutes when making this, but couldn't find them in the ingredients list available here, so although the recipe calls for Splenda, feel free to mix and match what you have on hand.
