Introduction

A good addition to a holiday or Sunday dinner. A good addition to a holiday or Sunday dinner.

Ingredients

    1 lb red potatoes
    3 tbsp Butter, unsalted
    3 tbsp all purpose flour
    1 tsp Salt
    1/4 tsp Pepper, black
    2 1/2 cup 1% milk
    1/4 cup, chopped Onions, raw


Directions

Wash potatoes. Cut into thin slices to measure 4 cups. Heat butter in saucepan over low heat until melted. Stir in flour, salt, and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir for 1 minute.

Arrange potatoes in greased 2-quart casserole dish in 3 layers, topping each of the first 2 layers with 1/2 of the onions and 1/3 of the white sauce. Top with the remaining potatoes and sauce. Cover and bake in 325 degree oven for 40 minutes. Uncover and continue baking 60-70 minutes longer, until potatoes are tender. Let stand 5-10 minutes before serving.
